What is the mechanism of dehydation of glucose/fructose ?

How does dehydration of glucose and fructose (some kind of sugar) take place? Electrons in -OH attack a carbon in another sugar molecule? I’d like to know the chemical mechanism of dehydration synthesis step by step.
