Any good diabetic cake recipes?

My boyfriend has founf out he is a diabetic, and his birthday is coming up soon. I would like to make him a cake but want something that isnt too gross like the flaxseed muffins. Anyone have any good recipes or tips?

You can use any recipes you want for the cake, just make sure it doesnt have any fruit juice added to it (or a very small amount) or any powered sugar. Any regular sugar can be replaced by Splenda (or another sugar substitute) and any brown sugar can be replaced with Splnda Brown Sugar Blend. And remember to let him only have one or two small pieces of cake.
By the way they make a really good low sugar cake mix and frosting that can be found at kroger or other larger grocery stores.
You could make him sugar free jello & use sugar free cool whip
Sugar free pudding also with cool whip.
Its not a cake, but no sugar & sweet.

OH MY WORD…………. dont use that recipe they listed its so full of carb he would be in the hospital !!!!!First how is he maintaning himself? Is he on insuliin, is he counting carbs, etc All things turn into sugar in your body except protein and fat. I have good pies recipes and such but they do HAVE CARBS and you have to watch that amount. To get anything good you are going to have a certain amount of carbs. YOU need to very carefully watch the equal and spenda sites because a lot of their recipes have a lot of carbs just because it says sugar free that could mean it has more carbs then a regular recipe,
You could probably do better in taste doing a cheesecake or something like that.
I have a cooking group with some healthy recipes that have counts. I have over 14000, not all healthy LOL.

Hey there, I am a Type-II diabetic and I know that there is no such thing as a GOOD diabetic cake. I am on medication and use that plus diet and exercise to control my diabetes and both my doctor - an Endocrinologist at Joslin Diabetes Center and my nutritionist/dietitian tell me just to eat regular cake but no more than a 2×2-inch square of a homemade or box made cake made with homemade frosting. I have been told to avoid ALL artificial sweeteners as they can lead to weight gain and are not really that good for Type-II diabetics as they are nothing but chemicals. As long as he is not making cake a part of his daily diet, he can have a small slice or square of regular cake on the rare occasion.

By the way, my average blood sugars are in the low to mid 70s and my A1Cs are in the low 200s - these are all levels of people who are not diabetic and I do not use or consume ANY artificial sweeteners or sugar alternatives.

Even if you managed to convert a standard cake recipe by using Splenda or another artificial sweetener, the sugar component is only half the battle. The flour (complex carbs) and fats also need to be considered.
If your BF is going to take care of himself properly, he is better off to change his eating habits. It is counterproductive to give him foods that are a poor substitute for the real thing. They do more damage in the long run compared to just adjusting eating habits.
Give him a nice bowl of sliced strawberries with candles and wish him happy birthday and many more.
